Two very different methods of distillation are, by regulation, allowed for the production of Armagnac: the more common continuous distillation method in a column still called Simple Chauffe or Armagnacais; and the more complex and rare method of pot still distillation called Double Chauffe or Double Distillation.

Janneau reintroduced the Double Distillation in the region in 1972 and for the past 25 years has been blending brandies made by the Simple Chauffe together with those distilled in Double Chauffe.
